Day 3 - Steak Burritos

We tried a new steak burrito recipe for dinner tonight and they were so yummy! I'll definitely be making them again.


I had to have hubby take the picture for me because I was holding the burrito together with my right hand. Oops. (Don't pay attention to my fingernails! They really need to be repainted...)

Here is the recipe I used. Super yummy and only 400 calories for two burritos!

Steak Burritos for Two
(recipe adapted from EatingWell.com)

1/4 cup salsa
1/4 cup water
2 tablespoons instant rice
3/4 cup canned black beans, rinsed
6 ounces strip steak, trimmed and thinly sliced crosswise
1/2 white onion
1/2 green pepper
1/2 red pepper
1 tablespoon olive oil
4 small tortillas (I used La Factory low carb, only 50 cal each)
1 oz shredded sharp Cheddar cheese
pepper
season all
garlic powder


Preparation

Combine salsa and water in a small saucepan; bring to a boil. Stir in rice, reduce heat to a simmer, cover and cook for 5 minutes. Stir in beans, return to a simmer and cook, uncovered, stirring occasionally, until the rice is tender and most of the liquid is absorbed, about 5 minutes more.

Meanwhile, heat oil in a medium skillet over medium-high heat. Stir in onions and peppers and saute until they start to get tender. Sprinkle steak with pepper, seasoned salt, and garlic powder. Add steak into the skillet with onions and peppers and cook, stirring occasionally, until browned and cooked through, about 3 to 5 minutes.

To assemble, divide the steak among the tortillas and top with equal amounts of cheese, and the rice mixture. Roll each tortilla up into a burrito. Enjoy!
